After 15,000+ events coordinated across different cities, taco truck catering is one of the formats we book most often, and one of the ones we hear the fewest complaints about after.

That said, a few things are worth sorting out before you commit.

The menu tells you a lot about the truck

A well-built taco menu covers real variety without overcomplicating things. You want at least three or four protein options, could be something like grilled chicken, pastor (marinated pork), asada (grilled beef), and barbacoa (slow-cooked shredded beef). Each brings something different. Pastor is smoky with a touch of sweetness. Barbacoa is rich and pulls apart. Asada is the one almost everyone orders.

Street-style tacos, corn tortilla, protein, cilantro, onion, salsa move fast and keep the line manageable. The simpler the format, the smoother the service at volume.

Beyond tacos, the better trucks round out the menu. Quesadillas, burritos, bowls for guests who want something more substantial. Esquite which is corn in a cup with mayo, cotija, and tajin is the kind of thing people aren't expecting and end up talking about afterward.

How many guests can taco truck catering handle?

A single taco truck can comfortably handle 150 guests over a 2-hour window. Past that, the line starts to feel it. For events over 200 guests, especially with a tighter service window, two trucks is worth a conversation before the day arrives.

How payment works

Two options. You cover the food upfront and guests eat without pulling out a wallet, cleaner experience, easier for corporate events and weddings. Or guests pay the truck directly, like any regular street stop.

What the truck needs from your venue

Taco trucks are self-contained. They run on their own generators and carry their own water, so no power hookups or plumbing connections are usually required. What they do need is about 30 to 45 feet of clearance, level ground, and vehicle access to the spot.
