In 2021, Victor Ochoa experienced an adventure he would never forget. He took a flight to Seattle with a special purpose: to buy an RV so he could travel with it. After the purchase, he drove it back to Utah, enjoying every moment of that unique trip and creating unforgettable memories. Years later, in 2023, Victor came up with a brilliant idea: to transform that same RV into a food truck to sell Peruvian food. He knew it was something uncommon in Utah, so he took the vehicle to a specialized manufacturer to convert it from a “tiny home on wheels” into a fully functional food truck. The process was challenging, he had to take apart almost the entire vehicle, but Victor was determined to keep that same RV that held so much meaning for him. His vision was clear: to offer something different from other food trucks. Every product from Inka Food Truck is fresh and handcrafted from the homemade bread to each carefully selected ingredient—avoiding preservatives or chemicals that can harm health. The goal was not just to sell food, but to promote a healthier, more natural lifestyle, standing out from the rest. That’s how Inka Food Truck was born—not just as a business, but as a project filled with passion, creativity, and commitment to authentic, healthy food, bringing a piece of Peru to every corner of Utah.
