Story
Sol Food BBQ & Grill – Owner: Rhett Malachowski Born and raised in Southern California, Rhett Malac howski brought his West Coast roots and love for bold, flavorful food to Salt Lake County in 2014. A longtime food service professional and reggae rock musician (of local bands Dub Nectar and Funk&Gonzo), Rhett combined his passion for music, culture, and cooking to create Sol Food BBQ & Grill — a vibrant food truck serving “Mexican with a side of BBQ.” Inspired by The Great Food Truck Race and fueled by years of experience at Hopkins Brewing (2019–2025), Rhett turned a pandemic-era food truck into a thriving business through luck, hard work, and community support. From his first day serving at Second Summit Cider to going full-time in 2025, Sol Food has become a reflection of Rhett’s creative spirit — bringing sunshine, soul, and seriously good tacos to every event.
