Why We Started Our Food Truck It all started with a dream and a huge craving for Taiwanese street food. We wanted to bring the bold flavors and energy of a real night market to Utah, so we took the leap and created 9-UP! The name 9-UP comes from the saying that a cat has nine lives, symbolizing resilience and perseverance. It's our way of reminding ourselves (and everyone else) that before giving up, we should at least try nine times. This mindset drives how we experiment, refine, and perfect everything we do especially our food. From our early days at the Downtown Farmers Market to serving at events across Utah, our goal has always been the same: to bring the joy, excitement, and bold flavors of a Taiwanese night market to our community one bite at a time!
