The Red Food Truck began in 2012, around a dinner table where my parents, Guido and Maria Luisa, and I were discussing how to make Peruvian food more accessible to everyone. We wanted to share our culture and cuisine far and wide—and we still do. That's when we came up with the idea of offering our most iconic dishes in a new format: a sandwich. Our top picks were #1 Pollo a la Brasa, #2 Asado de Puerco, #3 Pollo Saltado, and the crowd favorite, #4 Lomo Saltado. As time passed, we expanded our menu to include vegetarian options, sliders, salads, and we even brought back the original versions of Lomo Saltado and Pollo Saltado with all the traditional ingredients: meat, vegetables, fries, and rice. After all, in Peru, we’re obsessed with potatoes and rice! But some things haven’t changed—the delicious flavors, the love we put into every dish, and, of course, our iconic Hot Sauce. Those will always remain the same.
