About Brugesmobile

It was the cold winter of 2002 when Pierre took his first Liège Waffle Cart to SLC Main Street. Soon after, he became a favorite vendor at the SLC Farmers Market and went on to open two brick-and-mortar locations in the years that followed. While Pierre still manages the restaurants, his brother-in-law, Frederic, now operates the Brugesmobile food truck.

Story

Bruges is not only the birthplace of Pierre Vandamme, but it’s also famous for its medieval town, castles, romantic canals, and delicious street foods. Missing the fries and waffles from home, Pierre brought his family recipe for the Liège Waffle to Utah, sharing his passion with the community since 2002. From the Belgian town of Bruges came a Belgian man who loved great Belgian food—a love he carried across the sea to his new home in America. Inspired to bring the street cart food from the cobblestones of Bruges to Main Street, Salt Lake City, Pierre adapted his family recipe to create the Bruges Liège Waffle. In 2010, Frederic Bosteels joined the family business, and while Pierre manages the restaurants, Frederic now runs the food truck operation.
